s a pastry chef, I believe that every creation should reflect care, quality, and intention. That is why it is important for me to use high-quality ingredients in the preparation of my cakes and other sweets because I know that the best flavors begin at the source. I make only fresh cakes, and the preparation begins no more than three days before your requested date. I never freeze cake layers, creams, or fillings - everything is made fresh, from scratch, and with love. This commitment to freshness is a core part of my work and something that will never change.
The ingredients I choose are the heart of my cakes. I always work with high-quality staples like organic avocado oil, grapeseed oil or olive oil, premium butter, top-grade flour, organic eggs and milk, rich natural cocoa, Callebaut Belgian chocolate, natural vanilla, and Philadelphia cream cheese. Nothing that can spoil the taste of cakes I make for you. All of my cakes feature homemade fillings - salted caramel, berry and fruit compotes, lemon or orange curd - each one made fresh for every individual cake. I never reuse fillings; they’re tailored to match the flavors and textures of each specific order.
At the core of my cakes is a cream cheese frosting, which I believe is the most delicious and versatile. My daughter loves it so much she eats it by the spoonful! It’s moderately sweet, because I believe in letting the real flavors shine through. Many of my clients have shared how much they appreciate this balanced sweetness. The reason is that I use only a small amount of powdered sugar and butter in my cream cheese frosting, which is crucial for the overall taste of the cake. After all, when combined with the fillings, the cream cheese frosting creates just the right level of sweetness.
